Raw Chocolate Avocado Pudding

Several years ago I came across a recipe for a raw chocolate mousse created by Chef Susan Teton.  Until that moment, I had only enjoyed avocado in guacamole and salads.  I was not aware how versatile avocados were!  Facebook knows how much I love avocados because I regularly see a promoted post from the Avocados from Mexico

Susan’s recipe was quite rich, and there were ingredients used that were quite surprising.  While still use that recipe for special occasions, this streamlined version is perfect when we want a quick after dinner treat.
